Fennel

This fresh-tasting member of the carrot family, can be served cooked or raw. Fennel is the perfect addition to a summer salad to add a sweet aromatic flavor. (Recipe and image via FoodieCrush)

Fennel and Orange Salad:

  • 6-7 assorted oranges (cara cara, mandarin, minneola- you choose!)
  • 1 blood orange
  • ½ fennel bulb, very thinly sliced
  • 1 avocado, peeled, pitted and sliced
  • ½ shallot, peeled and very thinly sliced
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons champagne vinegar
  • 1 tablespoon honey
  • kosher salt and freshly cracked black pepper
  • ¼ cup mint leaves
  • Reserved fennel fronds

Preparation:

  1. Slice the peels off of the citrus and place in a bowl or on a serving plate. Layer with thinly slivered fennel slices. Add avocado slices and shallot slivers.
  2. In a small bowl, slowly whisk the olive oil into the champagne vinegar until emulsified. Add the honey and whisk to mix. Season with kosher salt and pepper.
  3. Pour dressing over the salad and season with more kosher salt and freshly ground pepper. Top with reserved fennel fronds and mint leaves.

Peaches

Soft and juicy peaches are already are a firm summer favorite. However, peaches are brilliant for more than just snacking. This July enjoy peaches in a variety of sweet and savory dishes. (Recipe and image via Sage & Sparkle)

Peach Bruschetta:

  • 1/2  small baguette (combo of Italian & pumpernickel)
  • 2 oz Soft Goat Cheese (or Tofutti cream cheese for those allergic to Dairy)
  • 1 Peach
  • 1 handful of fresh basil
  • 2 Tbsp EVOO
  • Honey for drizzle

Preparation:

  1. Preheat oven to 350 degrees
  2. Slice bread, place on cookie sheet, and drizzle both sides with EVOO;  bake for 5 min each side
  3. Meanwhile slice peach and grill, both sides
  4. Slice basil and saute in a small pan with a dash of EVOO for approx. 3 mins, until slightly crunchy
  5. Remove bread from over and let cool
  6. Style it yummy… starting with the  goat cheese, adding the peach slice, and a pinch of crunchy basil
  7.  Make it sparkle with a drizzle of honey

Crab

High in protein, low in saturated fat and packed full of essential vitamins, crab is at the top of our shopping list this month. Add crab to a zesty linguine pasta dish or roll into fishcakes and serve with a homemade tartar sauce. (Recipe and image via Alexandra’s Kitchen)

Linguine With Crab and Red Peppers:

  • 4 roasted red peppers, cut into slivers
  • 3 garlic cloves
  • Pinch of crushed red pepper flakes
  • 1/4 cup EVOO
  • 1/2lb linguine
  • Salt and pepper
  • 6oz. crabmeat
  • Bunch of fresh basil

Preparation:

  1. Bring a large pot of water to a boil. Add a big pinch of kosher salt. (I add about a tablespoon). Place the oil, garlic and red pepper flakes in a small skillet and turn heat to high. When the oil and garlic begin to sizzle, turn off the heat. (If you have an electric burner, as I do, remove pan from the heat source if the garlic begins to brown.)
  2. Cook pasta until al dente. Reserve 1/4 cup of the pasta cooking liquid. Drain pasta and place in a large bowl. Immediately toss with the garlic-red pepper flake oil. Add the sliced roasted red peppers, crab meat and fresh basil to the bowl. Toss together. Taste. Add some of the reserved pasta cooking liquid if necessary. Season with more salt and pepper if necessary.

Blackcurrant

In need of a fruity sweet fix? Look to the humble blackcurrant. They are bursting with vitamin c with an intense frutiness, which is perfect for jams, syrups and a cocktail… or two! (Recipe and image via Wholesome Cook)

Blackcurrant Caramel Yogurt Ice Pops:

  • ½ cup rice syrup, or honey
  • 2 tablespoons coconut cream or fresh cream
  • ¼ cup Barkers of Geraldine Lite Blackcurrant Syrup (or any other fruit syrup you like)
  • 1½ cups Greek-style full fat yogurt
  • 1 teaspoon vanilla essence, optional

Preparation:

  1. Place rice syrup and coconut cream in a small saucepan, whisk to combine and bring to a boil, reduce heat to a simmer and cook, for 6 minutes for the syrup to caramelise and reduce. Turn off the heat – the caramel will be very hot. Stand it for 5 minutes before adding blackcurrant syrup and whisking to combine. Place saucepan in a sink filled with cold water and allow to cool completely. To speed up the cooling process, after about 10 minutes, you can transfer the caramel into a heat-proof jug or jar and place back in the water. Whisk occasionally to prevent ‘skin’ from forming.
  2. Once the caramel is cool, you can assemble the ice pops. Mix vanilla essence, if using, into the yogurt. Take half the yogurt mixture and fill moulds to about halfway. Now add a tablespoon of the blackcurrant caramel and gently mix it into the yoghurt with a paddle pop stick to create a ripple. Top with remaining yogurt and another half a tablespoon of caramel and mix to incorporate the caramel into the layer. Slide paddle pop sticks into the ice pops and place them in the freezer for 4 hours to set.
  3. To serve, run moulds under warm water for a moment to help dislodge the pops. Keep pops in the mould or transfer to a zip lock bag and consume within a month.

We went on the hunt for amazing, crowd-pleasing 4th of July recipes, and it doesn’t get much better than the aptly named Honestly Yum. Their blog is stunning, and the recipes are creative, fun, actually manageable. Our favorites include their Cornbread Hot Dog Buns, adult-friendly Cocktail Snow Cones, refreshing Summer Nectarine Salad, and a treat for everyone to enjoy- Peanut Butter and Jelly Ice Cream Sandwiches. ReadLiane Morairty‘s novel “Big Little Lies” is a page-turning “whodunnit” that is both funny and suspenseful. It is the perfect summer read! After finishing this book we rushed out and bought a few more of her books for upcoming trips!
