Some of us in the Jigsaw London US office are big time football fans, but most of us are not.  (I actually keep forgetting that it’s Superbowl Sunday this weekend.)  But that’s not to say we don’t enjoy any excuse for a party!  But if you’re like us and are more excited about the food you’ll be eating and the commercials you’ll be watching this Superbowl Sunday, here’s a fool-proof recipe that is sure to class up the regular spread of chips and dips!

Originally from British chef Gordon Ramsay, this truffle oil and chives dip is quick and easy to make.  Plus it’s absolutely delicious on bread, crackers or chips (crisps if you’re British.) You’re certain to impress your football friends with this upscale take on a delicious Superbowl snack!

Dip for Superbowl Sunday

Truffled Cream Cheese & Chive Dip

Serves 3-4

* The important thing to remember when cooking with truffle oil is that it is very strong. A little bit goes a long way, so add a few drops at a time and taste as you go along.

300g cream cheese
150ml sour cream
Sea salt and freshly ground black pepper
Handful of chives, finely chopped
Few drops of truffle-infused olive oil

1 Put the cream cheese into a bowl and mash with a fork or spatula to loosen it. Mix in the sour cream, season to taste with salt and pepper and fold through the chopped chives. Add a few drops of truffle oil, according to taste.

2 Spoon into a dipping bowl and serve with lots of bread-sticks or crostini.
